Good To Go*

* At least in a couple of weeks.

Thanks to the fantastic efforts of our NHS, the UK vaccination program continues at pace. For the last week or so, adults in their mid-twenties have had the chance to receive their first dose of a Covid jab. The next month or so may see the same being offered to the next age group down, possibly late teens and upwards. Certainly the government have suggested they want to be offering a jab to secondary school children around September time. You never know it may happen. 

Meanwhile we shouldn't forget there's the little matter of the second dose, which is administered between eight and twelve weeks. My happy turn was this afternoon, at the Mad Stad again. In a couple of weeks I should have a full (or near to full) antibody response, just as the doctor ordered LOL.

Halloumi

Tonight's home cook: Halloumi and sweet potato curry with lentils, chunky carrot and a whole heap of other stuff LOL. Pictured is this evenings helping, there's plenty more for the freezer, along with a gin and tonic with the previously mentioned pre-prepared lemon slices.

Sliced

Ever fancied a slice of lemon with a nice cool drink but never have a fresh lemon to hand? 

Here's the perfect solution: slice one or a few lemons, place on a flat tray in your freezer overnight or until frozen. Then simply bag up and store in a nifty gap in the freezer. 

Next time you fancy a cool and zesty drink, just reach for a frozen slice or two. Simples, as those annoying meerkats tell us in those adverts for a certain price comparison website LOL.

Mexican

Pinch punch and all that!

Made myself this tonight for dinner: it's meant to be Mexican Beef Pasta but I was without some of the ingredients, so had to improvise. It consisted of Fusilli (instead of Penne), Carrots, Courgettes and Sugar Snap Peas, together with Beef Mince with curry powder owing to the lack of Mexican spices! Tomato purree had to sub in for the chopped tomatoes, which appeared to be MIA. All topped off with grated hard Italian cheese and breadcrumbs.

Not too bad, quite tasty. The recipe made four portions and I had sufficient space in the freezer for the remaining three. What's not to like?
